Pecora Dairy situated in the beautiful Southern Highland town of Robertson was launched by Michael and Cressida McNamara in 2011. Their dream was to produce carefully crafted, artisan cheese from their East Friesian herd.
Their hard work was awarded with a Gold Medal at this year’s Sydney Royal Cheese and Diary show for their delicious Jamberoo Mountain Blue, which was its first entry into a competition.
Michael and Cressida have been steadily building their East Friesian flock with careful breading and selection for the best producing ewes. They are currently milking a herd of 70 ewes that will increase to 100 – 120 ewes when the new season beings. Pecora Dairy has Australia’s only exclusive, working, pure East Friesian milking ewes.
Their philosophy is to be respectful of the underlying milk and not use cheese making ‘tricks’ to bring out the flavour. You can certainly taste their philosophy and care in their three beautiful cheeses - Bloomy White, Jamberoo Mountain Blue and Mezza.
With the great rain over summer providing lush green pasture and the creeks running through the property providing pure mountain spring water - these girls are a heard of happy ewes, which certainly comes through in the tasty cheeses Michael and Cressida are hand crafting for their growing followers.
